We have designed our advanced dinner parties course for those of you who can cook but want to push yourself onto the next level. Here the main emphasis is on the presentation of professional standard cooking using premium ingredients to produce the finest of dishes. As part of the course you will learn the art of boning, how to make perfect pastry, piping chocolate runouts and much much more.
Examples of dishes that may be included on the day are :
Spring Starter - Smoked trout roulade
Main - Pithiver of pork with cider sauce
Dessert - Pineapple Raviolo with mango filling and berries
Summer Starter - Wild mushroom & goats cheese tart
Mid summer salad, with soft poached egg & vinaigrette dressing
Main - Salmon with fish & crab mousseline, served with a tomato sauce
Seasonal vegetables
Dessert - Sable of raspberries, vanilla cream & raspberry butter sauce
Autumn Starter - Wild mushroom & goats cheese tart
Main - Guinea fowl with mustard sauce & celeriac rosti

Dessert - Plum & frangipane crumble tart with clotted cream & plum puree
Winter Starter - Winter waldorf salad
Main - Pheasant with sherry jus
Fondant of sweet potato with cabbage & bacon
